Amaranth is a plant often called a grain of the 21st century, which is becoming more and more popular because of its health and nutritional valued. Expanded amaranth is a product often chosen by conscious consumer who care about their health. Many of us do not know it enough and have no idea how to use it, therefore, staring from today, once in a while we are going to post a recipe, in which amaranth will play a key role.
Preparation time: 25 min
Ingredients:
45g (1,5 glass) amaranth popping
130g spelt flour
½ teaspoon stevia powder or birch tree sugar
60g dried cranberries
40g unrefined coconut oil
1 banana
1 egg
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon vanilla sugar
½ teaspoon cinnamon
pinch of salt
pinch of nutmeg
Preparation:
Mix dry ingredients (amaranth, flour, stevia, spices) in one bowl. Coconut oil should be melted and blended together with a crushed banana and whole egg. Combine wet ingredients with dry ones, add infused earlier cranberries and mix precisely. Put baking paper on a baking pan. Form round shapes from a dough according to the rule 2 teaspoons = 1 cookie. Bake 10-15 min in an oven heated to 180 °C. The cookies are ready! Bon appetite!

P.S. 2 If you want to increase protein content in the cookies, add 1 or 2 portions of your favorite protein powder, vanilla flavor would suit best. For example: Scitec Whey Isolate.
