Coconut is a highly nutritious and rich in fibre, vitamins and minerals (potassium, phosphorus, vitamin A) nut. Below is another quick recipe for something sweet, but at the same time dietetic; coconut biscuits with added protein. Very simple and quick to prepare. Ideal as an alternative to pastries from a bakery or a sweet coffee snack.
Preparation time: 25 mins
Ingredients: (around 20 pieces)
- 40g of spelled flour (1/3 glass)
- 200g of desiccated coconut
- 175ml of 1,5% milk (3/4 glass)
- A portion of vanilla protein supplement
- 1/3 teaspoon of stevia sweetener
- A pinch of salt
Preparation:
Preheat the oven to 180 degrees. Mix the flour with salt and desiccated coconut in a bowl. Pour in milk, add stevia and protein supplement, and mix until you get a thick mass. Take a sheet of baking paper and make small balls with the mass at suitable intervals. Bake for around 15 minutes, until it turns golden, at the same time making sure that they don’t burn. After removing the sheet, leave the biscuits to cool for a few minutes.
