Pectin is a mixture of amorphous sugars, of a high molecular weight (polygalacturonic acid chain combined with methanol [esterification] with branches side formed by arabinose and galactose. Pectin is fibre soluble in water (hot or cold) and therefore not subject to the process of digestion by enzymes synthesized by the body. They are found in products of plant origin (fruit, vegetables, etc.). Consumption of products containing pectin reduces hunger, improves the function of the digestive tract and reduces levels of bad cholesterol (LDL) in the blood..
